Sun dried tomatoes are first and foremost of traditional, rustic production.
Using age-old Sicilian techniques, our organic tomatoes are slowly dried using natural processes after long exposure to the south Italian sun. Every evening, to protect them from the night’s humidity, the tomatoes are carefully covered with a cloth.
During the drying phase the tomatoes are sprinkled with salt, allowing the dehydration process to take place and naturally aiding their preservation. Our grandfathers used this method to preserve and use the fruit even in the winter months.
Because of these methods used, Casulli Gastronomia sun dried tomatoes have unique aromas and flavours, a real taste sensation.
