Parmigiano Reggiano, or Parmesan, considered in Italy to be the king of cheeses (il re dei formaggi), is a product of protected designation of origin made in Emiglia Romana.
Parmigiano is a cooked and unpressed hard cheese, which in order to produce just one kilo requires 16 litres of milk, salt and rennet. This is why it is known for its high nutritional properties and its relatively low fat content.
Usually grated onto pasta, it can also be used as flakes to dress salad, carpaccio and meat dishes or simply savoured as it is with balsamic vinegar and/or honey.
